I saw this on a blog link up party, and thought it sounded like an interesting idea. I always like seeing what other people are eating anyway! So, here it is - this is what I had to eat yesterday. And after seeing a visual of what I'm eating I realized two things: I need more fruits and veggies and I need more water.
First, I started my morning with a cup of coffee in my Starbucks coffee mug that I got in Kauai when we visited my husband's grandparents who live on that island. It's my most favorite coffee cup and always makes me feel like it's summer outside when I use it. I usually drink the International Delights Chocolate Caramel creamer when I drink coffee creamer (I use good ole maple syrup and milk the vast majority of the time), but today, I thought I'd try something new. I switched that out for some International Delight Salted Caramel Mocha coffee creamer, which is pretty heavenly. I think I prefer the Chocolate Caramel flavor better though. I drink my coffee in the mornings on my couch with my two munchkins while they watch cartoons. It's our morning tradition now. I ended up having two cups of this.
Around 9:30, I started to get a little hungry. Usually I eat much, much earlier than that, but my body is still so messed up from Daylight Savings Time and I haven't quite adjusted yet. I found this yogurt at the grocery store this weekend and I am absolutely loving it. It's SO good! It's Raspberry Greek yogurt that comes with a lid that includes Dove Dark Chocolate shavings. And it only has 120 calories!
After that, I started working, and needed something to drink. So I grabbed a Diet A&W Cream Soda. I work from home and really try to limit what I eat during the day, because some days, I want to eat ALL. THE. FOOD. Lord help me if there is pizza in the house on those days!! Sometimes a flavored drink is all I need to stop me from eating everything in sight.
I ate lunch around 11am. I had a teleconference meeting at Noon, so I had to eat a little early. I made, what I call, Pizza Salad. I love pizza; what can I say? There's lettuce, tomato, onion, green bell pepper, 1.5 ounces of mini pepperonis, 1/4 cup of three cheese blend, three tablespoons of marina sauce, and one tablespoon of ranch dressing. I topped it off with Italian seasoning. It was really, really good. And it does pretty well at keeping my pizza cravings at bay.
After my teleconference got over and I finished up work, I decided it was snack time before I had to go run errands and take little Miss P to ice skating lessons. I was trying to keep it healthy and add in something that would hold me over until 7pm when I would be done making supper. I opted for some mini pretzels (one serving), a 1/2 ounce of cheddar cheese and a 1/2 cup of grapes. I also realized that I had not had any water at this point, so I guzzled 20 ounces of water. Then I refilled it with 20 ounces of water mixed in with Crystal Light Peach Tea mix. That's one of my favorites!
For supper, I went with simplicity. For me, that meant pulling out some meatballs my mom had made for me last weekend out of the freezer and heating them up in some barbeque sauce. I whipped up some mashed potatoes really fast and threw on a piece of buttered toast. Supper. It's not fancy, but oh my word! It was good! I found the recipe for the meatballs here (and, yes, I've tried the meatball sliders that are in that link and they delicious!). I always double the batch and make three meals worth of meatballs (2 of which I put in the freezer for quick and easy weeknight meals).
Tuesdays (when I took these pictures) are always super busy days, and today was not an exclusion! My kids have been on spring break this week, which means that working from home gets a little crazy and I sometimes have to bribe them to be good while I am in virtual meetings. Yesterday, I bribed them with chocolate pudding. We had made this the day before, but I had forgotten about giving it to them after supper (whoops!). So, they had this as an afternoon snack. I saved mine for after I put them to bed. It was my "I Survived Bedtime" treat. This is Hersey's Dark Chocolate pudding (made with 3 cups of milk because I read the instructions for making chocolate pie and not pudding) with canned cherry pie filling. Again, it's not fancy, but it's good. And yes, I am eating out of one of the kids' plastic bowls. It was a busy day. And I hate doing dishes. 'Nuff said.
